Ingredients
- ½ C margarine, softened
- 1 ½ C sugar
- 3 eggs
- 1 tsp. vanilla
- ¼ tsp. maple extract
- 1 C mashed, cooked yams
- ¼ C sour cream substitute
- 2 T. fresh orange juice
- ½ tsp. grated orange rind
- 2 C flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- ¼ tsp. salt
- 1 C golden raisins
Streusel Topping
- ½ C packed dark brown sugar
- 2 T. margarine, softened
- 2 T. flour
- 1 tsp. cinnamon
- ½ C walnuts, chopped
Instructions
- Preheat oven to 350 degrees Fahrenheit and grease a Bundt pan.
- Cream together butter and sugar in a large bowl and beat in eggs, one at a time until fluffy.
- Beat in vanilla, maple extract, yams, sour cream, orange juice, and rind until creamy and smooth.
- Stir together flour, baking powder, baking soda, cinnamon, and salt in a separate bowl until combined.
- Blend this gradually into the creamed mixture until it reaches a uniform consistency, then stir in raisins.
- Combine all streusel ingredients in a small bowl and spoon ½ the batter into prepared Bundt pan. Smooth the top to create an even layer.
- Sprinkle on half of streusel mixture, then repeat this procedure, ending with final layer of streusel.
- Bake cake for 1 hour and 10 minutes or until toothpick inserted comes out clean. Cool for about 30 minutes before removing from pan.
