Makes 6 to 8 servings.
Ingredients:
- 1 ½ lbs lean ground beef
- 2 C chopped onions
- 2 C green sweet peppers
- 1 to 2 T. chili powder
- 1 tsp. salt
- ½ tsp. ground black pepper
- ½ tsp. garlic powder
- 1 can (14 ½ to 16 oz) tomatoes, chopped
- 3 C cooked rice
Instructions:
- Cook beef, onions, green peppers, and seasonings until meat is no longer pink and vegetables are tender, stirring frequently to crumble meat.
- Add tomatoes and rice and spoon into a buttered 2-quart casserole dish.
- Bake at 350 degrees Fahrenheit for 25 minutes, or until thoroughly heated.
