Makes 6 to 8 servings. 

Ingredients:

  • 1 ½ lbs lean ground beef
  • 2 C chopped onions
  • 2 C green sweet peppers
  • 1 to 2 T. chili powder
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • ½ tsp. garlic powder
  • 1 can (14 ½ to 16 oz) tomatoes, chopped
  • 3 C cooked rice

Instructions:

  1. Cook beef, onions, green peppers, and seasonings until meat is no longer pink and vegetables are tender, stirring frequently to crumble meat.
  2. Add tomatoes and rice and spoon into a buttered 2-quart casserole dish.
  3. Bake at 350 degrees Fahrenheit for 25 minutes, or until thoroughly heated.
