Ingredients:

  • 2 C rice cereal
  • 2 C rolled oats (Note 1)
  • ½ C raisins
  • ½ C roasted, shelled, and salted sunflower seeds
  • ½ C roasted, salted pepitas
  • ½ C roasted soy nuts or sesame seeds
  • 1/3 C xylitol (Note 2)
  • ½ C light corn syrup (Note 3)
  • ½ C nut/seed butter
  • 1 tsp. vanilla

Instructions:

  1. Spray a 9×13” pan with cooking spray.
  2. Stir together cereal, oats, raisins, sunflower seeds, pepitas, and soy nuts in a large bowl.
  3. Mix sugar or xylitol, corn syrup or glycerin and honey, and nut/seed butter in a medium saucepan.
  4. Cook over medium heat 3-5 minutes or until bubbly.
  5. Remove from heat, stir in vanilla.
  6. Pour over cereal mixture, stir to combine.
  7. Press into pan and let cool.

Note 1:

You can also use quinoa flakes and buckwheat flakes.

Note 2:

You can also use ½ C brown sugar.

Note 3:

You can also use ½ C glycerin with ½ C honey.
