Ingredients:
- 1-2 large frying chickens
- Water, as needed
- Medium grain rice, as needed (Note 1)
Instructions:
- Place chicken(s) in a roaster and completely cover with water.
- Season as desired.
- Bake at 300 degrees Fahrenheit for 4-5 hours.
- Remove from the roasting pan and take enough broth off to leave 2 to 2 ½ inches.
- Add enough rice for the broth to cover the rice by an inch or so.
- Cover the roaster and put back in the oven for 25 minutes.
- Remove from the oven and check the tenderness of the rice.
- Cover the pan and allow to stand in its own heat until the rice is done.
Note 1:
You can also try other grains, such as millet or barley.
