Ingredients

  • ½ C margarine, softened
  • 1 ½ C sugar
  • 3 eggs
  • 1 tsp. vanilla
  • ¼ tsp. maple extract
  • 1 C mashed, cooked yams
  • ¼ C sour cream substitute
  • 2 T. fresh orange juice
  • ½ tsp. grated orange rind
  • 2 C flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ¼ tsp. salt
  • 1 C golden raisins

Streusel Topping

  • ½ C packed dark brown sugar
  • 2 T. margarine, softened
  • 2 T. flour
  • 1 tsp. cinnamon
  • ½ C walnuts, chopped

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a Bundt pan.
  2. Cream together butter and sugar in a large bowl and beat in eggs, one at a time until fluffy.
  3. Beat in vanilla, maple extract, yams, sour cream, orange juice, and rind until creamy and smooth.
  4. Stir together flour, baking powder, baking soda, cinnamon, and salt in a separate bowl until combined.
  5. Blend this gradually into the creamed mixture until it reaches a uniform consistency, then stir in raisins.
  6. Combine all streusel ingredients in a small bowl and spoon ½ the batter into prepared Bundt pan. Smooth the top to create an even layer.
  7. Sprinkle on half of streusel mixture, then repeat this procedure, ending with final layer of streusel.
  8. Bake cake for 1 hour and 10 minutes or until toothpick inserted comes out clean. Cool for about 30 minutes before removing from pan.
