Ingredients:

  • 6 –8 apples, peeled and sliced
  • 4 T. cornstarch
  • 4-6 yams, fresh or canned
  • 1 tsp. salt
  • 2 C yam liquid
  • ½ C margarine
  • 1 C sugar

Instructions:

  1. Boil yams in water until just soft, then remove yams and use liquid to make sauce.
  2. Mix cornstarch with a little cold water to dissolve and add 2 C hot yam water, salt, sugar and margarine.
  3. Cook over medium heat until mixture bubbles and thickens, stirring constantly.
  4. Pour sauce over sliced apples and yams laid out in a 3-quart casserole.
  5. Cover and bake 30-45 minutes or until apples are tender.
