• 2 ½ quarts broken bread crumbs
  • Goose giblets
  • 1 large onion, finely chopped
  • 2 Jonathan apples, diced
  • Salt and pepper, as needed
  • Garlic, as needed
  • Sage, as needed


  1. Boil giblets until tender and remove skin.
  2. Chop very fine and add to bread, onion, and apples.
  3. Mix it all up and add salt and pepper, sage, garlic, and any other seasonings you like.
  4. Moisten and stuff goose and put in a roasting pan, grease with two T. of margarine and sprinkle with a dab of flour.
  5. Roast in a 350-degree Fahrenheit oven about 15-20 minutes for each pound.
