Makes 24 muffins.

Ingredients

  • 3 C oats
  • 1 ½ C oat flour or ½ of this as rice flour
  • 1 ¾ tsp. cinnamon (optional)
  • 2 tsp. baking powder
  • 1 ½ tsp. baking soda
  • 2 C applesauce
  • 1 C rice milk or pear juice with 2 tsp. vinegar
  • 1 C brown sugar
  • ½ C vegetable oil
  • 2 eggs

Instructions

  1. Combine dry ingredients.
  2. Combine wet ingredients.
  3. Combine dry and wet ingredients, then stir until just mixed.
  4. Add dried fruit, if desired.
  5. Bake in the oven at 330 degrees for 15 –17 minutes.
  6. Gently score the edges of the muffins with a knife.
  7. Flash freeze on a flat sheet, then store lying flat in a Zip-Loc freezer bag.

Note 1:

You can use pear juice with 2 tsp. vinegar.
