Makes 6 servings.

Ingredients:

  • ½ tsp. ground cinnamon
  • ½ C flour
  • ½ C brown sugar, firmly packed
  • ½ C quick-cooking oatmeal
  • ½ C pecans, chopped
  • ½ C butter, room temperature
  • 2 40 oz. cans sweet potatoes, drained
  • 2 C fresh cranberries
  • 2 C cooking apples, peeled, cored, and sliced

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix cinnamon, flour, brown sugar, oatmeal, pecans, and butter together until the mixture is crumbly.
  3. Layer half the sweet potatoes, half the cranberries and half the apple slices in a greased 2-quart casserole dish.
  4. Sprinkle evenly with half the crumb mixture.
  5. Repeat the layers.
  6. Bake uncovered for 35 minutes, or until the top is lightly browned.
