Makes 2-4 servings.
Ingredients:
- 2 large sweet potatoes or yams
- 1 T. olive oil
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Microwave the sweet potatoes for eight minutes and dice into ½” cubes.
- Heat the oil in a large sauté pan at high heat.
- Add all of the vegetables when the oil just begins to smoke and sauté for about 10 minutes. (Note 1)
- Add the garlic and continue to sauté until all the vegetables are browned.
- Serve garnished with chopped parsley.
Note 1:
Reduce heat or add a tablespoon of water if there is sticking.
Variations:
- For a spicy version, add chopped jalapeno peppers
- Use a mixture of white and sweet potatoes
- Add fresh ginger and finish with soy sauce for an Asian-inspired side dish.
