Ingredients:

  • 3 C sweet potatoes, cold, mashed, and prepared without milk or butter
  • 1 C sugar
  • ½ C milk substitute
  • ¼ C margarine, softened
  • 3 eggs
  • 1 tsp. salt
  • 1 tsp. vanilla

Topping Ingredients:

  • ½ C packed brown sugar
  • ½ C chopped pecans
  • ¼ C flour
  • 2 T. cold margarine

Instructions:

  1. Beat sweet potatoes, sugar, milk, margarine, eggs, salt, and vanilla until smooth.
  2. Transfer mixture to a greased 2-quart baking dish.
  3. Combine brown sugar, pecans, and flour in a small bowl.
  4. Cut in margarine until crumby and sprinkle over potato mixture.
  5. Bake uncovered, at 325 degrees Fahrenheit for 45-55 minutes or until golden brown.
