Ingredients:
- 3 C sweet potatoes, cold, mashed, and prepared without milk or butter
- 1 C sugar
- ½ C milk substitute
- ¼ C margarine, softened
- 3 eggs
- 1 tsp. salt
- 1 tsp. vanilla
Topping Ingredients:
- ½ C packed brown sugar
- ½ C chopped pecans
- ¼ C flour
- 2 T. cold margarine
Instructions:
- Beat sweet potatoes, sugar, milk, margarine, eggs, salt, and vanilla until smooth.
- Transfer mixture to a greased 2-quart baking dish.
- Combine brown sugar, pecans, and flour in a small bowl.
- Cut in margarine until crumby and sprinkle over potato mixture.
- Bake uncovered, at 325 degrees Fahrenheit for 45-55 minutes or until golden brown.
