Makes 6 servings.
Ingredients:
- 3 medium baked potatoes with skins, cooled
- 1 T. sesame oil
- 1 T. fresh ginger, grated
- 1 clove garlic, crushed
- 1 green onion, finely chopped
- 2 T. low sodium soy sauce
Instructions:
- Cut baked potatoes into bite-sized chunks.
- Pour sesame oil into a large skillet and heat on high.
- Add ginger, garlic, and green onion and cook, stirring frequently for about one minute.
- Add potatoes and soy sauce.
- Heat through about two minutes and serve.
