Makes 6 servings.


  • 3 medium baked potatoes with skins, cooled
  • 1 T. sesame oil
  • 1 T. fresh ginger, grated
  • 1 clove garlic, crushed
  • 1 green onion, finely chopped
  • 2 T. low sodium soy sauce


  1. Cut baked potatoes into bite-sized chunks.
  2. Pour sesame oil into a large skillet and heat on high.
  3. Add ginger, garlic, and green onion and cook, stirring frequently for about one minute.
  4. Add potatoes and soy sauce.
  5. Heat through about two minutes and serve.
