Ingredients:

  • 3 C cooked rice
  • 2 eggs, beaten
  • 2 C grated mozzarella cheese, divided
  • 2 cans (8 oz. each) tomato sauce
  • ½ tsp. each basil leaves and garlic salt
  • ½ tsp. ground oregano
  • 2 T. grated parmesan cheese

Instructions:

  1. Combine rice, eggs, and 1 C mozzarella cheese.
  2. Press firmly into greased 12” pizza pan, spreading evenly.
  3. Bake at 450 degrees Fahrenheit for 20 minutes.
  4. Combine tomato sauce and seasonings, then spread evenly over rice crust.
  5. Top with remaining mozzarella cheese and sprinkle with parmesan cheese.
  6. Bake 10 minutes longer and cut into wedges.
