Ingredients
- 1 C raisins
- 1 C sugar
- ½ C oil
- 4 oz mixed candied fruit
- 1 ½ C water
- 2 C rice flour
- ½ C soy flour
- 1 C cornmeal
- 4 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. instant coffee
Instructions
- Boil raisins, sugar, oil, and candied fruit in water.
- Let cool and add rice flour, soy flour, and cornmeal mixed with baking powder.
- Add cinnamon and instant coffee.
- Bake in a loaf pan at 350 degrees Fahrenheit for roughly one hour.
