Ingredients

  • 1 C raisins
  • 1 C sugar
  • ½ C oil
  • 4 oz mixed candied fruit
  • 1 ½ C water
  • 2 C rice flour
  • ½ C soy flour
  • 1 C cornmeal
  • 4 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. instant coffee

Instructions

  1. Boil raisins, sugar, oil, and candied fruit in water.
  2. Let cool and add rice flour, soy flour, and cornmeal mixed with baking powder.
  3. Add cinnamon and instant coffee.
  4. Bake in a loaf pan at 350 degrees Fahrenheit for roughly one hour.
