Ingredients:
- ½ C oil
- ½ C honey, warmed
- ¾ C brown sugar
- 1 lemon rind, grated
- Juice of 1 lemon
- 2 T. egg substitute
- 1 ½ C soy flour
- 1 ½ C low fat soy powder
- 3 tsp. baking powder
- Chopped nuts, as needed
- Coarse sugar, as needed
Instructions:
- Mix thoroughly oil, honey, and brown sugar.
- Add lemon rind, lemon juice and egg substitute.
- Mix soy flour, soy powder and baking powder.
- Knead, roll out dough, and form cookies with cutter.
- Moisten the tops with an egg substitute and sprinkle heavily with chopped nuts and coarse sugar.
- Bake at 325 degrees Fahrenheit for 20-25 minutes.
