Ingredients:

  • ½ C oil
  • ½ C honey, warmed
  • ¾ C brown sugar
  • 1 lemon rind, grated
  • Juice of 1 lemon
  • 2 T. egg substitute
  • 1 ½ C soy flour
  • 1 ½ C low fat soy powder
  • 3 tsp. baking powder
  • Chopped nuts, as needed
  • Coarse sugar, as needed

Instructions:

  1. Mix thoroughly oil, honey, and brown sugar.
  2. Add lemon rind, lemon juice and egg substitute.
  3. Mix soy flour, soy powder and baking powder.
  4. Knead, roll out dough, and form cookies with cutter.
  5. Moisten the tops with an egg substitute and sprinkle heavily with chopped nuts and coarse sugar.
  6. Bake at 325 degrees Fahrenheit for 20-25 minutes.
