Makes 2-4 servings.

Ingredients:

  • 2 large sweet potatoes or yams
  • 1 T. olive oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Microwave the sweet potatoes for eight minutes and dice into ½” cubes.
  2. Heat the oil in a large sauté pan at high heat.
  3. Add all of the vegetables when the oil just begins to smoke and sauté for about 10 minutes. (Note 1)
  4. Add the garlic and continue to sauté until all the vegetables are browned.
  5. Serve garnished with chopped parsley.

Note 1:

Reduce heat or add a tablespoon of water if there is sticking.

Variations:

  • For a spicy version, add chopped jalapeno peppers
  • Use a mixture of white and sweet potatoes
  • Add fresh ginger and finish with soy sauce for an Asian-inspired side dish.
