Jambalaya

(Milk Free, Wheat Free)
  • 3 Pounds Choice Chicken Pieces
  • Salt And Ground Black Pepper
  • 3 Tablespoons Bacon Drippings Or Vegetable Oil
  • 2 Cups Each Sliced Celery And Green Onions, Including Tops
  • 1 Cups Chopped Green Sweet Peppers
  • 1 Cup Uncooked Rice
  • 2 Cups Boiling Broth
  • 1 Teaspoon Salt
  • 2 Cloves Garlic, Minced
  • ¼ Teaspoon Each Ground Black Pepper And Red Pepper
Season Chicken With Salt And Pepper.  Brown On All Sides In Drippings In Large Oven-Proof Skillet Or Dutch Oven.  Remove Chicken. Pour Off All But 2 Tablespoons Drippings. Add Celery, Onions, And Green Peppers. Cook Until Tender. Stir In Rice, Broth, And Seasonings. Return Chicken To Pan. Cover And Bake At 375 Degrees, Or Until Chicken Is Tender. Fluff With A Fork. Adjust Seasonings, If Necessary. Makes 6 Servings.
