Fast Chicken Fiesta

(Milk Free, Wheat Free)
  • 2 ½ To 3 Pounds Choice Chicken Pieces
  • Salt And Ground Black Pepper
  • 2 Tablespoons Butter Or Margarine
  • 4 Ounces Bulk Fresh Pork Sausage
  • ¾ Cup Each Sliced Celery And Green Onions, Including Tops
  • 3 Cups Cooked Rice
  • 1 Can (12 Ounces) Whole Kernel Corn With Peppers
  • 2 Teaspoons Lemon Juice
Season Chicken With Salt And Pepper.  Brown In Butter, Using Ovenproof Skillet. Remove Chicken And Set Aside. In Same Skillet, Cook Sausage, Celery, And Onions Until Vegetables Are Tender. Add Rice, Corn, And Lemon Juice. Adjust Seasonings. Mix Well. Return Chicken To Skillet. Cover. Bake At 350 Degrees For 30-40 Minutes, Or Until Chicken Is Tender.
