Barley Salad

(Barley Salad)
  • 1 Cup Peal Barley
  • 2 Large Tomatoes, Chopped Into Chunks
  • 1 Green Pepper, Diced
  • 3 Or 4 Scallions, Sliced
  • 1 16-Oz. Can Of Kernel Corn, Drained
  • 1/3 Cup Olive Or Canola Oil
  • 5 Tablespoons Cider Vinegar
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Cumin
  • Salt To Taste
Cook Barley In Boiling Water For 20 Minutes Until It Is Tender. Drain And Rinse With Cold Water. Mix All Ingredients Together And Refrigerate. Serve Chilled.
