Ingredients:
- ½ C honey
- ½ C oil
- 1 ½ C mashed pumpkin
- 1 tsp. lemon extract
- 1 tsp. vanilla
- 2 ½ C rice flour
- 2 C quinoa flour
- 1 C tapioca flour
- 2 tsp. baking powder
- ¼ tsp. salt
Instructions:
- Mix thoroughly honey and oil, then add mashed pumpkin, lemon extract, and vanilla.
- Mix rice flour, quinoa flour, tapioca flour, baking powder, and salt.
- Blend everything to “drop cookie” consistency.
- Place on a greased cookie sheet and flatten with fork.
- Bake at 350 degrees Fahrenheit for 20 minutes.
