Ingredients:

  • ½ C honey
  • ½ C oil
  • 1 ½ C mashed pumpkin
  • 1 tsp. lemon extract
  • 1 tsp. vanilla
  • 2 ½ C rice flour
  • 2 C quinoa flour
  • 1 C tapioca flour
  • 2 tsp. baking powder
  • ¼ tsp. salt

Instructions:

  1. Mix thoroughly honey and oil, then add mashed pumpkin, lemon extract, and vanilla.
  2. Mix rice flour, quinoa flour, tapioca flour, baking powder, and salt.
  3. Blend everything to “drop cookie” consistency.
  4. Place on a greased cookie sheet and flatten with fork.
  5. Bake at 350 degrees Fahrenheit for 20 minutes.
