Ingredients
- 2 C sorghum flour
- 1 C tapioca flour
- 5 T. baking powder
- 1 tsp. salt
- 4 T. sweetener of choice
- 2 eggs
- 6 T. oil
- 3 T. vanilla
- 2 C milk substitute
- 2 ripe bananas
Instructions
- Sift together all dry ingredients.
- Mix liquid ingredients in with the dry ingredients.
- Fry the mixture as pancakes.
Note 1:
The author used 2/3 C cooked mashed sweet potato. You can also use butternut squash or acorn squash, or all three mixed with a little banana.
