Ingredients
- 1 16 oz. can of plain pumpkin
- 1 C water
- 1 envelope unflavored gelatin or 1 T. agar
- 1 C date sugar
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- ¼ tsp. cloves
- ¼ tsp. allspice
- ¼ tsp. ginger
- 1 baked single-crust pie shell
Instructions
- Prepare and bake the pie shell.
- Put water in a saucepan and sprinkle the gelatin over the surface of the water.
- Heat the water over medium heat, stirring occasionally until it comes to a boil and the gelatin dissolves.
- Stir in the rest of the ingredients and put the pumpkin mixture into the pie shell.
- Refrigerate for several hours until it is thoroughly chilled.
