Ingredients:

  • 1 lb fresh mushrooms, sliced
  • 2 bouillon cubes (beef, chicken, or vegetable)
  • 1 C celery, chopped
  • 2 bay leaves
  • 2 whole cloves
  • ¼ tsp. dried thyme
  • ¾ C pearl barley
  • 1 C carrots, diced
  • 1 large onion, chopped
  • ½ bunch fresh parsley
  • ¼ tsp. black pepper

Instructions:

  1. Put all the ingredients into a large pot.
  2. Add water and bring to a boil.
  3. Turn down the heat and simmer for about one hour, or until the vegetables and barley are tender.
