Makes 6 servings.
Ingredients:
- 2 C cooked rice
- 4 apples, peeled, cored and sliced
- 4 tsp. lemon juice
- ¾ C brown sugar, firmly packed and divided
- ¼ C sugar
- ½ tsp. ground cinnamon
- ¼ tsp. salt
- ¾ C all-purpose flour (Note 1)
- 6 T. margarine
- ½ C nut meat, chopped
Instructions:
- Combine rice, apples, lemon juice, sugar, and seasonings in large bowl.
- Spoon in a buttered shallow 2-quart baking dish.
- Mix flour and remaining sugar, then cut in margarine until mixture is crumbly.
- Stir in nut meats and sprinkle over rice mixture.
- Bake at 350 degrees Fahrenheit for 30 minutes or until apples are tender.
- Serve warm topped with cool whip, if desired.
Note 1:
You can use alternative flour, such as tapioca, rice, potato, etc.
