Makes 6 servings.

Ingredients:

  • 2 C cooked rice
  • 4 apples, peeled, cored and sliced
  • 4 tsp. lemon juice
  • ¾ C brown sugar, firmly packed and divided
  • ¼ C sugar
  • ½ tsp. ground cinnamon
  • ¼ tsp. salt
  • ¾ C all-purpose flour (Note 1)
  • 6 T. margarine
  • ½ C nut meat, chopped

Instructions:

  1. Combine rice, apples, lemon juice, sugar, and seasonings in large bowl.
  2. Spoon in a buttered shallow 2-quart baking dish.
  3. Mix flour and remaining sugar, then cut in margarine until mixture is crumbly.
  4. Stir in nut meats and sprinkle over rice mixture.
  5. Bake at 350 degrees Fahrenheit for 30 minutes or until apples are tender.
  6. Serve warm topped with cool whip, if desired.

Note 1:

You can use alternative flour, such as tapioca, rice, potato, etc.
