• 1 C millet grits
  • 3 C hot water
  • 1 tsp. salt
  • 4 beaten eggs
  • ½ C whipping cream
  • 1 C water
  • Butter, to taste


  1. Mix millet grits with hot water and salt.
  2. Cook over medium heat, stirring constantly until thick.
  3. Beat the eggs, whipping cream, and water until fluffy.
  4. Add the hot grits to this mixture, a little at a time.
  5. Stir well and pour into an oiled casserole dish.
  6. Dot with butter and bake at 300 degrees Fahrenheit until set and slightly browned.
