From the Ener-G Egg Replacer Box.

Ingredients

  • ¼ C Ener-G Egg Replacer (Note 1)
  • 1 C sugar
  • ¼ tsp. salt, optional
  • 1 – ½ C hot water
  • 1/3 C fresh lemon juice
  • 2 T. grated lemon rind
  • 1 baked 9-inch pie shell

Instructions

  1. Combine egg replacer, sugar and salt in a double boiler and stir with until thoroughly blended.
  2. Add water, lemon juice, and lemon rind, then continue stirring until smooth and thick. (Note 2)
  3. Remove from heat and stir for five minutes to cool.
  4. Pour into pie shell and let cool thoroughly.
  5. Refrigerate at least two hours before serving.

Note 1:

This is a product made mostly of potato starch and calcium carbonate. You can probably substitute corn starch or arrow root starch in quantity to equal two eggs.

Note 2:

When dropped from spatula, pie filling should mound.
