Ingredients:

  • ½ C honey
  • ½ C oil or 1 stick milk free margarine
  • 2 T. egg substitute
  • 3 lemon rinds, finely grated
  • 1 ¼ C rice flour
  • 1 tsp. baking powder

Instructions:

  1. Mix thoroughly honey, oil or milk free margarine, egg substitute, and lemon rinds.
  2. Mix rice flour and baking powder, then add to the rest of the ingredients.
  3. Bake a sample of drop cookies. (Note 1)
  4. Bake remaining dough for 30 minutes at 350 degrees Fahrenheit.

Note 1:

If too soft, add 1 T. rice flour (lower altitudes need more flour).
