Ingredients:
- ½ C honey
- ½ C oil or 1 stick milk free margarine
- 2 T. egg substitute
- 3 lemon rinds, finely grated
- 1 ¼ C rice flour
- 1 tsp. baking powder
Instructions:
- Mix thoroughly honey, oil or milk free margarine, egg substitute, and lemon rinds.
- Mix rice flour and baking powder, then add to the rest of the ingredients.
- Bake a sample of drop cookies. (Note 1)
- Bake remaining dough for 30 minutes at 350 degrees Fahrenheit.
Note 1:
If too soft, add 1 T. rice flour (lower altitudes need more flour).
