Makes 4 servings.

Ingredients:

  • 1 T. olive oil
  • 1 small onion, thinly sliced
  • 1 clove garlic, minced (Note 1)
  • 4 carrots, sliced
  • 4 stalks of celery, sliced
  • 5 plum tomatoes, cubed
  • 1 C green beans
  • 1 C dried lentils or beans
  • 2 C leftover meat, ground beef, turkey meat, etc.
  • 6 C broth

Instructions:

  1. Add all the remaining ingredients to the pot of softened onion and garlic and bring to a boil.
  2. Reduce heat to low, cover, and simmer until the lentils are tender – about 30 minutes. (Note 2)

Note 1:

In a saucepan, heat the oil and add the onion and garlic. Cook about three minutes until soft but not browned. Get creative. Use whichever vegetables and meats you like.

Note 2:

You may want to add the tomatoes at the end of the cooking time if you’d like them to hold their texture.
