• 2 C water
  • ½ C grits, quick-cooking variety
  • Salt, to taste


  1. Bring the water to a boil and add salt.
  2. Slowly stir in the grits and stir for a few more seconds.
  3. Turn the heat to medium-low and cover the pan.
  4. Cook for five minutes and stir once or twice.
  5. Remove from the heat and stir in a pat of butter, if desired.
  6. Serve hot.
