• 2 ½ to 3 lbs of chicken pieces
  • Salt and ground black pepper, as needed
  • 2 T. butter or margarine
  • 4 oz. turkey sausage
  • ¾ C each sliced celery and green onions, including tops
  • 3 C cooked rice
  • 1 can (12 oz.) whole kernel corn with peppers
  • 2 tsp. lemon juice


  1. Season chicken with salt and pepper.
  2. Brown in butter, using ovenproof skillet.
  3. Remove the chicken and set aside.
  4. Cook the sausage, celery, and onions in the same skillet until vegetables are tender.
  5. Add rice, corn, and lemon juice, adjusting seasonings as needed.
  6. Mix well and return the chicken to the skillet.
  7. Cover and bake at 350 degrees Fahrenheit for 30-40 minutes, or until the chicken is tender.
