Ingredients:
- 2 ½ to 3 lbs of chicken pieces
- Salt and ground black pepper, as needed
- 2 T. butter or margarine
- 4 oz. turkey sausage
- ¾ C each sliced celery and green onions, including tops
- 3 C cooked rice
- 1 can (12 oz.) whole kernel corn with peppers
- 2 tsp. lemon juice
Instructions:
- Season chicken with salt and pepper.
- Brown in butter, using ovenproof skillet.
- Remove the chicken and set aside.
- Cook the sausage, celery, and onions in the same skillet until vegetables are tender.
- Add rice, corn, and lemon juice, adjusting seasonings as needed.
- Mix well and return the chicken to the skillet.
- Cover and bake at 350 degrees Fahrenheit for 30-40 minutes, or until the chicken is tender.
