Makes 8 servings.

Ingredients:

  • ½ fresh pineapple, peeled, cored and sliced
  • 8 apricots, seeded and sliced
  • 8 dried or fresh figs, stemmed and halved
  • 2 Jonathan apples, peeled, cored, and sliced
  • 1 pear, peeled, cored, and sliced
  • 3 peaches, pitted and sliced
  • 1 stick unsalted margarine
  • 2 T. curry powder
  • ½ C brown sugar

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and grease a glass rectangular baking dish.
  2. Arrange fruit randomly in baking dish, distributing each type all over.
  3. Melt butter in a saucepan, then add curry powder and brown sugar.
  4. Pour over fruit and bake covered with foil for 35 minutes.
  5. Remove foil and bake 10 more minutes.
