Makes 8 servings.
Ingredients:
- ½ fresh pineapple, peeled, cored and sliced
- 8 apricots, seeded and sliced
- 8 dried or fresh figs, stemmed and halved
- 2 Jonathan apples, peeled, cored, and sliced
- 1 pear, peeled, cored, and sliced
- 3 peaches, pitted and sliced
- 1 stick unsalted margarine
- 2 T. curry powder
- ½ C brown sugar
Instructions:
- Preheat oven to 350 degrees Fahrenheit and grease a glass rectangular baking dish.
- Arrange fruit randomly in baking dish, distributing each type all over.
- Melt butter in a saucepan, then add curry powder and brown sugar.
- Pour over fruit and bake covered with foil for 35 minutes.
- Remove foil and bake 10 more minutes.
