Ingredients

  • 3 sticks margarine
  • 2 C sugar
  • 2 tsp. vanilla
  • 3 eggs
  • Salt, as needed
  • 3 tsp. baking soda
  • 4 T. cornstarch
  • 1 ½ C oat flour
  • 2/3 box of quick oats
  • Chocolate chips, as needed

Instructions

  1. Cream margarine and sugar.
  2. Add vanilla and egg and mix.
  3. Combine dry ingredients and add, then mix.
  4. Add oat flour and quick oats in combination desired. (Note 1)
  5. Add chips and pack lightly, as if making snowballs, then flatten slightly onto greased cookie sheet.
  6. Bake at 375 degrees Fahrenheit for 8-10 minutes.

Note 1:

Less flour and more oats make chewier cookies.
