• 1-2 large frying chickens
  • Water, as needed
  • Medium grain rice, as needed (Note 1)


  1. Place chicken(s) in a roaster and completely cover with water.
  2. Season as desired.
  3. Bake at 300 degrees Fahrenheit for 4-5 hours.
  4. Remove from the roasting pan and take enough broth off to leave 2 to 2 ½ inches.
  5. Add enough rice for the broth to cover the rice by an inch or so.
  6. Cover the roaster and put back in the oven for 25 minutes.
  7. Remove from the oven and check the tenderness of the rice.
  8. Cover the pan and allow to stand in its own heat until the rice is done.

Note 1:

You can also try other grains, such as millet or barley.
