Ingredients

  • 2 C brown sugar
  • ½ C oil
  • ¾ C soy milk (Note 1)
  • 1 T. egg substitute
  • 1 C cold mashed potatoes
  • 8 T. instant carob powder
  • 2 C rice flour
  • 3 tsp. baking powder
  • 1 C nuts or seeds, optional
  • 1 C puffed millet or puffed rice

Instructions

  1. Cream the brown sugar.
  2. Add egg substitute, cold mashed potatoes and instant carob powder.
  3. Sift rice flour with baking powder and nuts.
  4. Fold ingredients together and add millet or puffed rice.
  5. Bake for 40 minutes at 350 degrees Fahrenheit.
  6. Make a white icing after cooling.

Note 1:

You can substitute this with soy milk yogurt and juice of ½ lemon.
