Ingredients
- 2 C brown sugar
- ½ C oil
- ¾ C soy milk (Note 1)
- 1 T. egg substitute
- 1 C cold mashed potatoes
- 8 T. instant carob powder
- 2 C rice flour
- 3 tsp. baking powder
- 1 C nuts or seeds, optional
- 1 C puffed millet or puffed rice
Instructions
- Cream the brown sugar.
- Add egg substitute, cold mashed potatoes and instant carob powder.
- Sift rice flour with baking powder and nuts.
- Fold ingredients together and add millet or puffed rice.
- Bake for 40 minutes at 350 degrees Fahrenheit.
- Make a white icing after cooling.
Note 1:
You can substitute this with soy milk yogurt and juice of ½ lemon.
