This mild and refreshing drink was popular in Victorian England.
Ingredients:
- ½ C pearl barley
- 8 C water
- ¼ C lemon juice
- 4 tsp. sugar or honey
Instructions:
- Bring water and barley to a boil and simmer at low heat for about two hours.
- Strain barley and cool liquid slightly.
- Add lemon juice and sugar or honey.
- Serve as a hot drink or chill and serve cold.
