This mild and refreshing drink was popular in Victorian England.


  • ½ C pearl barley
  • 8 C water
  • ¼ C lemon juice
  • 4 tsp. sugar or honey


  1. Bring water and barley to a boil and simmer at low heat for about two hours.
  2. Strain barley and cool liquid slightly.
  3. Add lemon juice and sugar or honey.
  4. Serve as a hot drink or chill and serve cold.
