Ingredients:

  • 1 C pearl barley
  • 2 large tomatoes, chopped into chunks
  • 1 green pepper, diced
  • 3 or 4 scallions, sliced
  • 1 16-oz. can of kernel corn, drained
  • 1/3 C olive or canola oil
  • 5 T. cider vinegar
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • Salt, to taste

Instructions:

  1. Cook barley in boiling water for 20 minutes until it is tender.
  2. Drain and rinse with cold water.
  3. Mix all ingredients together and refrigerate.
  4. Serve chilled.
