Ingredients:
- 1 C pearl barley
- 2 large tomatoes, chopped into chunks
- 1 green pepper, diced
- 3 or 4 scallions, sliced
- 1 16-oz. can of kernel corn, drained
- 1/3 C olive or canola oil
- 5 T. cider vinegar
- 1 tsp. chili powder
- 1 tsp. cumin
- Salt, to taste
Instructions:
- Cook barley in boiling water for 20 minutes until it is tender.
- Drain and rinse with cold water.
- Mix all ingredients together and refrigerate.
- Serve chilled.
