Makes 46 servings.


  • ½ C soy butter
  • 4 T. sugar
  • ¾ C browned ground almonds
  • 2 tsp. almond extract
  • 1 ½ C rice flour


  1. Cream soy butter and sugar until smooth.
  2. Add almonds and almond extract.
  3. Add rice flour and mix.
  4. Roll little balls between the palms of the hands and lay on baking sheet.
  5. Bake at 375 degrees Fahrenheit for eight minutes.

Note 1:

They may be rolled in powdered sugar if desired and become firm when they cool.
